Ingredients:
1 Cup Dry Quinoa
2 Cups of Water
½ Cup of Lemon Juice
3 TBS Balsamic Vinegar
4 TBS Olive Oil
1 TBS Minced Garlic
1 TSP Salt
½ Cup of Chopped Cilantro
1 Small Onion, Chopped
1 Red Pepper, Diced
½ Cucumber, Diced
Directions:
- Cook quinoa according to the instructions on the package. Set aside to cool.
- Whisk together lemon juice, vinegar, oil, garlic, salt, and pepper.
- Add onion, cilantro, red pepper, and cucumber to the quinoa.
- Poor the lemon juice mixture over the quinoa mixture.
- Serve chilled.
